Preparation Time:
10 minutes
Cooking Time:
1 hours, 0 minutes
Serves: 8
Ingredients:
6 peaches or nectarines
6 plums
6 apricots
Juice of 1 lemon
1 pinch cinnamon
100 - 225 g (4 - 8 oz) sugar (according to the acidity of the fruit used)
1 splash water
6 slices white bread, 5 mm (¼ inch) thick, crusts removed
110 g (4 oz) softened butter
3 tbsp water
1 tsp lemon zest
Method:
Put the nectarines, plums and apricots in a pan with the lemon juice, cinnamon, sugar and a little water, and poach lightly for about 5 minutes. Allow them to cool, then drain off most of the liquid and save to use as a sauce.
Butter the white sliced bread and use it to line a pudding bowl with the buttered side facing the bowl. Press it all down and then fill it with the cooled fruit. Cover the fruit with more buttered bread to form a lid and then press well down. Put it in the fridge for a while to allow the juices from the fruits to soak into the bread.
Bake in a moderate oven 190°C (375°F / Gas 4) for about 1 hour or until the bread is toasted to a golden brown. Cool in the bowl for a few minutes and turn onto a serving dish.
observação: podem alterar as frutas, nomeadamente frutos do bosque ficam muito bem. Bom proveito!
